Such rapid growth places greater demands on both water resources and wastewater treatment. The production of milk, cheese and whey is extremely water-intensive, requiring water for heating, cooling, sterilization and cleaning. It is estimated that many dairy plants require up to 10 m³ of water for every 1 m³ of milk produced (European Dairy Association), placing additional pressure on vital water resources.
The high volume of water used in dairy processing also generates significant volumes of wastewater. According to MDPI, approximately 74% of the water used in dairy processing is returned to the water cycle as effluent. Dairy wastewater can contain high concentrations of lactose, proteins and fats, oils and grease (FOG), contributing to high organic loads that can place significant demands on wastewater treatment systems and, if not effectively managed, negatively impact receiving waterways and aquatic ecosystems.
Rising municipal sewer charges and stricter regulations relating to discharge standards mean that efficient management of wastewater is crucial within dairy processing applications for both sustainability and process optimization. While laws may vary across the globe, there is an expectation that dairy manufacturers minimize their environmental impact and put measures in place that help reduce overall water consumption and protect natural waterways.
Many dairy processing facilities use on-site treatment systems to manage wastewater quality before discharge. Due to the high and variable organic loads associated with dairy production, monitoring parameters such as chemical oxygen demand (COD), biochemical oxygen demand (BOD), total organic carbon (TOC) and total suspended solids (TSS) can provide important insight into wastewater conditions and treatment performance. Together, these measurements can help dairy processors work toward several important environmental and operational objectives:
Organic matter in water can cause excessive microbial and algae growth, leading to oxygen depletion and making waterways uninhabitable for fish and other aquatic life. Measurements such as COD and BOD provide insight into organic loading and associated oxygen demand, helping operators assess treatment performance before treated effluent is discharged to receiving waterways.
Regulatory bodies impose limits on wastewater discharges, which may include requirements for COD, BOD and TSS, depending on local discharge permits and regulations. Tracking relevant water quality measurements throughout treatment and at final discharge helps facilities evaluate effluent quality against applicable discharge requirements.
High and fluctuating organic loads can overwhelm wastewater treatment systems and lead to large-scale process upsets. Tracking changes in COD, BOD and TOC provides insight into organic loading, helping operators maintain process stability and optimize treatment performance.
FOG can accumulate within pipelines and treatment equipment, while suspended solids can contribute to operational and maintenance challenges. Monitoring TSS provides insight into suspended solids levels, helping operators identify conditions that may affect treatment efficiency and equipment performance.
Effective wastewater treatment can create opportunities to reuse treated water for suitable non-potable applications, such as cleaning, heating and cooling. Monitoring relevant water quality measurements throughout treatment can help operators evaluate treatment performance and determine whether treated water meets applicable quality requirements for its intended reuse. Water reuse initiatives can reduce freshwater consumption while helping preserve natural resources.
Managing dairy wastewater effectively requires monitoring technologies that can keep pace with changing production conditions while delivering reliable data with minimal operational burden. Because organic loading can change quickly during production shifts, product changeovers and cleaning cycles, periodic sampling alone may not capture short-duration changes that affect treatment performance. Real-time water quality monitoring can provide additional visibility between laboratory samples, helping operators identify changing conditions as they occur and make informed process adjustments.
UV-Vis spectrometry can provide real-time insight into wastewater quality by measuring multiple parameters simultaneously. Spectrometer probes provide a more complete picture of changing conditions while complementing periodic laboratory analysis.
When selecting monitoring technology, dairy processors should also consider measurement stability, installation flexibility and maintenance requirements. Factory pre-calibrated instruments can simplify deployment, while in-situ and flow cell installation options accommodate different treatment configurations. Technologies without consumables or moving parts can also reduce ongoing maintenance requirements and associated operating costs.
Solutions such as the Badger Meter spectro::lyser V3 Industrial ATEX and i::scan Spectrophotometer Probe use UV-Vis spectrometry to monitor COD, BOD, TOC and TSS in wastewater applications. Configurable measurement capabilities allow monitoring to be adapted to specific treatment requirements and operating conditions.
Real-time measurements become even more valuable when connected with communications technology, monitoring software and analytics platforms. Centralizing and visualizing this data allows operators to evaluate trends over time and understand how wastewater conditions respond to production schedules, product changeovers and cleaning cycles.
Within the BlueEdge® portfolio, technologies such as the con::cube V3 IoT Terminal and moni::tool Water Quality Software combine water quality measurements with data management and visualization capabilities. Together, these technologies help operators evaluate real-time and historical data, improve process control and make more informed operational decisions.
At a large dairy processing facility, product loss during cleaning cycles and maintenance contributed to increased costs and COD spikes in the effluent. Small changes in process conditions or human error could inadvertently send valuable product into the wastewater stream, increasing both product loss and organic loading.
Using the spectro::lyser Industrial ATEX and moni::tool Water Quality Software, the facility gained real-time visibility into effluent streams and could identify abnormal changes associated with product loss. Event detection helped operators respond quickly, pinpoint sources of excess waste and optimize procedures.
As a result, the facility reduced product loss and operating costs while improving its ability to manage COD levels and support discharge compliance. The application demonstrates how real-time measurement and monitoring software can turn effluent data into actionable insights that support wastewater management and operational efficiency.
As global demand for dairy products continues to grow, tightening environmental regulations, increasing water scarcity and rising operational costs are placing greater pressure on processors to manage wastewater efficiently and protect vital water resources.
Real-time monitoring, connected data and analytics can help dairy processors better understand changing treatment conditions, evaluate performance, improve process control, manage costs and identify opportunities for water reuse.
Badger Meter supports this approach with water quality monitoring, communications technology and software that turn real-time and historical data into actionable insights. By combining reliable measurement with connected data, dairy processors can make more informed decisions and build more efficient, resilient and sustainable wastewater treatment operations.
